We're in Palm Springs to celebrate Mindy's birthday. Mindy's friend Isaac and her sister Maureen joined us for the weekend. We're roasting by the pool (of course, anyone who knows me knows that they're roasting and I'm under an umbrella) in 100 degree weather. What better way to enjoy the day than with an Aperol Spritz.
Aperol is an Italian orange and rhubarb flavored liqueur with just a hint of grapefruit-rind bitterness. Mixing it with Prosecco and club soda turns it into a fantastic adult soda.
We used a bottle of Prosecco that we got in our VJB Wine Club Membership. (http://vjbcellars.com) for the first round of cocktails.
Ingredients
ice
4 1/4 ounces brut Prosecco
2 1/2 ounces Aperol
3/4 ounce club soda
1 lime wheel or thin orange slice for garnish (the cocktail tastes better with the orange slice)
Fill a tall glass with ice. Pour the prosecco over, then add Aperol and club soda. Garnish with the lime or orange wheel.
